Spring can never come too soon, and the flavors of the season marry beautifully with tender and authentically spiced carnitas in a deliciously fresh salad that's great as a side dish or a whole meal.
½ lb. | Charlie's Pride Carnitas |
1 | Gala or other type of crisp apple, julienned (soak in lemon or lime juice to prevent browning) |
½ cup | Dried cranberries |
2 heads | Iceberg lettuce |
⅓ cup | Honey |
½ cup | Walnut halves, toasted |
8 oz | Light salad dressing |
In a small sauce pot over medium heat, warm honey until bubbling, then add walnuts. Continue to cook while stirring for 2 mintues, making sure to thoroughly coat walnuts in honey; remove and place on sheet tray to cool. Portion lettuce between 4 salad plates, top with chunks of carnitas, then apples. Finish with a sprinkle of dried cranberries and honey glazed walnuts, then drizzle with your favorite salad dressing and serve immediately.
